Green Thumb

Well it is official! I have a green thumb!!!! This is the very first harvesting of a vegetable that I have grown in my entire life. I am a true gardener now. Look at my pretty green leaf lettuce!!!

I took great care of her and washed each one of her little leaves individually…

and made a killer salad! I can’t take credit for this recipe. But for those of you who know me well, if I am eating salad you know it is good!

Christy’s Colorful Salad

Iceberg lettuce
Spinach red Leaf lettuce
Romaine lettuce
cashew halves
dried cranberries
red delicious apple

Mexican Dressing:
1 cup sugar
1 cup Wesson canola oil
1/3 cup apple cider vinegar
1/4 cup orange juice
1/2 teaspoon pepper
1 teaspoons salt
1 tablespoons onion flakes
1 tablespoons prepared mustard
2 tablespoons mayonnaise

1.Using any of the combination above prepare salad for the amount of servings you need. Right before serving, add cashews, apple and dressing. Use the dressing sparingly. I use about 1/2 cup on the entire salad. You can always add more dressing, go light the first time around.
2. Blend all the dressing ingredients together the day before using. Store in a container until ready to use.

I must say my lettuce tasted very leafy. I am guessing with all the stuff they use on the lettuce in stores it must take away the flavor or something. Tim liked it a lot better but it tasted rather vegetable-y for me. I still liked it but store bought is milder for my tastes.

  1. Jennifer P. says

I think that vegetable-y would be a normal and healthy taste for a vegetable :)!!!

Actually, I commend you for your first vegetable grown! I LOVE the feeling of picking produce out of my own garden–especially with prices being what they are right now.

Can’t wait to see what else you pick! And I’ll have to dry that recipe soon—looks yummy :)!

  2. great job on the lettuce and the salad eating!! that dressing sounds good – i will have to try it out. looking forward to seeing more things from the garden!

  3. oooh nummy! I’m gonna have to try it.

  4. Oooooohhhh…I am so proud of you, Beck! Please make this salad for me when I come to visit y’all…one day…

  5. I’m making this tonight!(drooling)

Who would have thought my hip, little party animal at one time, would have become so domesticated…?

Wow boog… are the whole package. Lucky Tim!

  6. Great job on the veggie garden. I can’t wait to see what comes next.

That salad looks very yummy. I think I’ll add it to our dinner rotation this week.

  7. Yeah, I’m excited for you! I know how disappointed you were to have to leave your garden here before getting to harvest anything!

  8. Growing veggies and eating them too! You go girl!

  9. That is a very nice looking head of lettuce. And a great looking salad. Thanks for joining us for WCW!
